Lamb shawarma rice bowl
A weeknight bowl built from the same spices as the platter but ready in under an hour: quick-seared lamb strips over vermicelli rice, with a sharp tomato salad, pickles and a heavy pour of tahini.

Toss the sliced lamb with the olive oil, lemon juice, garlic, baharat, cumin, coriander and salt. Leave to marinate while you cook the rice — 25 minutes is enough for thin slices.

Melt the butter in a saucepan over medium heat and fry the broken vermicelli, stirring constantly, until it is an even hazelnut brown. It goes from golden to burnt in seconds.

Add the rinsed rice, stir for a minute to coat, then pour in 550 ml boiling salted water. Cover, drop the heat to low and cook 12 minutes.

Take the pan off the heat and leave covered for 10 minutes, then fluff with a fork.

Meanwhile toss the tomato, cucumber, red onion and sumac with a little olive oil, lemon and salt.

Heat a heavy skillet until smoking. Sear the lamb in two batches, 2 minutes per batch, tossing once — thin lamb overcooks in seconds.

Build the bowls: rice, lamb and its pan juices, salad, pickled turnips, and a generous spoon of tahini over everything.

Finish with an extra pinch of sumac and serve hot.
Notes
Leftover roast lamb works perfectly here — skip the marinade and just crisp the shredded meat in a hot pan with the spices and a splash of oil. The toasted vermicelli step is small but it is what makes the rice taste like a restaurant rather than a side.
